Madeleine shows us how to make a bread that requires no kneading whatsoever. Using just whole grains (spelt, oat, and millet) that she grinds (and of course you can instead use flour) and some water, caraway seeds, and a bit of salt, she adds the wild yeast (see below) and leaves it warming over night in the oven with the light on.
