Bossam is a simple meal made in kimchi making season. It's delicious fatty pork belly that pairs perfectly with fresh kimchi or one year old kimchi. <br /><br />Bossam recipe:<br /><br />[Spices]<br />5~7 bay leaves<br />1 tbsp of black pepper<br />2 tbsp Salt<br />2 tbsp Soy bean paste<br />1 tbsp coffee<br />1/2 cup of Soju<br />7cups of water<br /><br />[Veggies]<br />1 half onion<br />2 inches of Reddish<br />1 thumb of ginger<br />1 spring onion<br />5~10 cloves of garlic<br />1 half pear (optional)<br /><br />Put everything in the pot and bring to a boil. <br />When the water is boiling then add the pork belly. <br /><br />10 minutes - Boil on high<br />50 minutes - low simmer<br /><br />When finished put the pork belly into a cold water broth for 30 seconds<br />Slice and pair with kimchi<br />...<br /><a href="https://www.youtube.com/watch?v=L25JlDIpc8I" target="_blank" rel="nofollow">https://www.youtube.com/watch?v=L25JlDIpc8I</a>
