One of the hardest and hated pans to get clean, this design is made for grilling. Most use it once and say "Never again!" after having tried to clean it. Steam cleaning is the easiest way to clean pans and will make you want to use this pan again!<br /><br />If you have a rusted pan, you will need to deal with that too. My advice is to get a "chainmail" cast iron scrubber, or use rock salt to remove rust. For heavy rust, I recommend a brass wire wheel and a high speed hand drill. Then, steam clean it as shown in this video, thoroughly. Keep in mind this will remove all the seasoning and you will have to start over from scratch. (not the end of the world)<br /><br />I use a variety of vegetable sprays for seasoning. Some people freak out when I use olive oil spray because it "has a low smoking temperature." To which I say, the goal is to create a carbon layer on the pan for its non-stick properties. The oil has to be "burned" off to make this happen. Who cares if a lower temperature starts this process? That is also why I season my pans outside! The only downside of using olive oil is that it is normally more expensive than the other oils. Canola oil is not good for you... if you buy it, only use it for seasoning cast iron.<br /><br />Always leave the pan with a LIGHT coat of oil to prevent corrosion until the next time you use that pan. Also, if you use animal fat rendering oil to season or leave a light coat of oil, this is totally fine!
